"The 100 Cookies"
(This is a favorite cookie at our Summer Seminars...mmm.)

1 cup sugar
1 cup brown sugar
1 cup margarine
1 cup rice krispies
1 cup coconut
1 cup oil
1 cup quick oats
1 egg
1 tsp. vanilla
31/2 cups flour
¾ tsp salt
1 tsp soda
1 tsp cream of tarter

In large bowl mix sugar, margarine, oil, egg, vanilla, rice krispies, coconut & oats. Sift together salt, flour, soda, & cream of tarter. Add to sugar mixture and mix well. Drop by spoonful onto greased cookie sheet.
 

Bake 10-12 min @ 350 degrees

Pumpkin Whoopie Pie

  • 1 Small can pumpkin
  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 4 tsp. baking powder
  • 11/2 tsp. salt
  • 2tsp. cinnamon
  • 2 tsp.
  • Baking soda diluted in2 Tbs. milk
  • 4 cups flour
  • 2tsp vanilla

Mix pumpkin, eggs, oil & vanilla. Add sugar and diluted baking soda. In a separate bowl mix baking powder, salt, cinnamon & flour. Add to wet mixture. Spoon onto cookie sheet & bake 15-18 min. @ 350 degrees. Let cool.

Cream Cheese Filling

  • 1 8 oz pkg. cream cheese
  • 1 cube margarine
  • 1 tsp. vanilla
  • 11/2 lbs. powdered sugar
  • 2-4 Tbs. canned evaporated milkAdd more if too stiff.

Beat to a spreading consistency. Spread a generous amount between
2 cookies....Enjoy!
